• 4 Woodsmoke Gourmet Cedar wraps
  • 4 Salmon fillets (approximately 200g each)
  • 1/2 tablespoon butter
  • 1/4 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1/2 tablespoon whole grain mustard
  • 1 large garlic clove, smashed


  1. Submerge cedar wraps in water to soak.
  2. To make the sauce, melt butter over low heat and then add sugar, mustard, vinegar and garlic clove. Cook until reduced and thick, about 4-5 minutes; remove garlic clove.
  3. Preheat BBQ to medium-high heat, about 200°C.
  4. Season salmon with salt and pepper and place each piece into a soaked Cedar wrap.
  5. Fold edges of wrap in towards fish and secure with cotton string.
  6. Place wrapped salmon and BBQ for approximately 5 minutes per side.
  7. Serve cedar wrapped salmon on plates, cut string and gently open paper. Drizzle with balsamic sauce and garnish with spring onions to serve.
