INGREDIENTS
- 4 Woodsmoke Gourmet Cedar wraps
- 4 Salmon fillets (approximately 200g each)
- 1/2 tablespoon butter
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1/2 tablespoon whole grain mustard
- 1 large garlic clove, smashed
INSTRUCTIONS
- Submerge cedar wraps in water to soak.
- To make the sauce, melt butter over low heat and then add sugar, mustard, vinegar and garlic clove. Cook until reduced and thick, about 4-5 minutes; remove garlic clove.
- Preheat BBQ to medium-high heat, about 200°C.
- Season salmon with salt and pepper and place each piece into a soaked Cedar wrap.
- Fold edges of wrap in towards fish and secure with cotton string.
- Place wrapped salmon and BBQ for approximately 5 minutes per side.
- Serve cedar wrapped salmon on plates, cut string and gently open paper. Drizzle with balsamic sauce and garnish with spring onions to serve.
