INGREDIENTS
- 1 Alder or Maple Grilling Plank, soaked
- 2 Pork rib chops – bone in (+-230g each)
- 1/3 Cup India Pale Ale
- ¼ Cup Brown Sugar
- ¼ Cup Balsamic vinegar
INSTRUCTIONS
- Soak grilling plank in water for one or more hours, the longer the better. Use something heavy to weigh the plank down as it soaks to keep it completely submerged.
- Make glaze by reducing beer, sugar and vinegar on the stovetop until it thickens
- Preheat BBQ to 180ºC. Place the pork chops on BBQ, bone down and sear for 3 minutes. Place pork chops on the alder/maple grilling plank and paint with glaze. Close lid and cook.
- Remove from BBQ and let it rest for 3 minutes. Serve with more IPA!
