• 1 Alder or Maple Grilling Plank, soaked
  • 2 Pork rib chops – bone in (+-230g each)
  • 1/3 Cup India Pale Ale
  • ¼ Cup Brown Sugar
  • ¼ Cup Balsamic vinegar


  1. Soak grilling plank in water for one or more hours, the longer the better. Use something heavy to weigh the plank down as it soaks to keep it completely submerged.
  2. Make glaze by reducing beer, sugar and vinegar on the stovetop until it thickens
  3. Preheat BBQ to 180ºC. Place the pork chops on BBQ, bone down and sear for 3 minutes. Place pork chops on the alder/maple grilling plank and paint with glaze. Close lid and cook.
  4. Remove from BBQ and let it rest for 3 minutes. Serve with more IPA!
