Wraps infuse food with a subtle Cedar / Alder flavour, while keeping the serving moist and tender. Wraps are excellent for barbecuing delicate foods such as whole Trout, Prawn, Lobster, Scallops, Asparagus – and so much more! 
As well as being a winner on the BBQ, Cedar wraps can be used in the oven or on the stovetop in a pan. (try oven cooked whole Rainbow Trout in Cedar wrap !!)
Note. Cedar wraps are not as robust as planks. Charring from the BBQ is desirable, but care should be taken to prevent wraps from igniting!

BBQ Method

SOAK wraps in a shallow dish in water for 10-20 minutes, making sure they are fully submerged (you can weight them down with a water filled glass)
PREHEAT BBQ to medium heat of 180º- 200ºC
PREPARE food in the center of the wrap, parallel to the grain of the wood
WRAP edges toward each other until they overlap slightly. Wraps are 18 x 20cm
TIE with a piece of the enclosed natural fiber twine
BBQ wrapped parcel on the preheated BBQ grill grate and keep a spray bottle handy for possible flare-ups. Close the BBQ lid and cook for 5-10 minutes, or until cooked to your taste
EAT Serve straight to the dinner table for a delicious meal with attractive presentation
